So, it’s almost Thanksgiving.

You know what your main dish will be…but what are you having besides turkey?

If you’re looking for inspiration, we have some recipes from dietitian Jamie Vespa. They’re bursting with ripe vegetables and fall flavors – but they’re healthy, too.

Here are some options:

Mini Pumpkin Turkey Meatballs with Herbed Goat Cheese

5 Ingredient Roasted Parsnip and Garlic Soup

Mushroom and Quinoa Stuffed Acorn Squash

Low Fat Apple Bacon Gouda Mac and Cheese

Spaghetti Squash Casserole with Mushrooms and Goat Cheese

Autumn Delicata Squash Salad

Pesto Roasted Potato Salad

Turmeric Roasted Chickpea and Quinoa Salad

In case you missed it, we also recently ran a list of pumpkin recipes.

And, of course, there’s that question every year: what do you do with the leftovers? We have ideas for those, too. In the following recipes, it’s easy to swap turkey for chicken:

Cheesy Chicken and Broccoli Quinoa Bake

Lightened Up Chicken Waldorf Salad

Green Goddess Chicken Salad Sandwiches
